Axia is an elegant, low-sugar spirit distilled from the aromatic resin of the Mastiha tree, a gnarled and twisted evergreen found clutching to the hillsides of Chios, Greece. Revered for its natural flavour and beauty, this resin has incited jealousy and warfare. It’s even been used as a snakebite anti-venom - a potent elixir from which our spirit has been inspired.
Today, through the art of our master distiller and her team, Axia keeps the unique characteristics of Mastiha, but with additional velvety flavour notes of bergamot and cypress, and a fragrant rose aroma. It is a refreshing, extra-dry spirit that takes the millennia-old rules of Mastiha-making, and artfully twists them.
Through these millennia-old, sustainable farming techniques that continue to employ entire local villages, the trees are harvested twice a year. The bark is sliced and the sap milked and left to dry in the wind as crystal ’tear drops’. These crystals are collected, cleaned by hand and shipped to the nearby Plomari distillery. They are mixed with alcohol and twice distilled in a process that brings together traditional hand-crafted copper stills with the cutting-edge science of the master distiller, Maroussa Tsachaki.
The result is a premium, dry, unsweetend white spirit with only 0.5% sugar. Whats more, its calorie count is similar to that of Tequila, and considerably lower than other spirits.
