QQRQ TEPEZTATE
These agave all grow wild and semi wild around the palenque in Matatlan and the surrounding valleys. It's part of the agave Marmorata family and has a very distinct apperance. Tepeztate are the jewel in the crown of all Oaxacan agaves and can take as many as 30 years to mature in the wild, and sustainability efforts are needed in order to keep mezcal production of this agave in the future. Despite all odds it seems to flourish best on the sides of steep rocky cliffs.
METHOD
Artisanal – pit roasted, crushed with Tahona, wild fermentation in wooden vats, double distillation in alembic stills
TASTE & AROMA
Nose - Herbal, oily, grassy
Palate - big, bold vegetal notes, slight smoke, earthy Finish - long, slightly sweet
